Changes in Chlorophyll and Carotenoid Contents during cold and CA Storage , and Characterization of the Carotenoids in the Peel of ¢¥ Fuji ¢¥ Apple Fruit


Abstract
This study was designed to analyse chlorophyll and carotenoid contents during cold and controlled atmosphere (CA) storage, and to identify characterization of the carotenoids in the peel of ¢¥Fuji¢¥ apple fruit. Assay of total chlorophyll contents in the peel of ¢¥Fuji¢¥ apple fruit showed a partial explanation for the changes occurring in the fruit color. Although the fruit was partly colored with a green color at harvest, its chlorophyll content was low (59.5 §¶/g, f.w.). Within 2 months at 20¡É the fruit chlorophyll (a+b) had decreased to 60% of their initial values. The ratio (2.9) of chlorophyll a/b at harvest decreased a little during storage because there was proportionately more chlorophyll b. Among cold and CA storage methods the most amount of chlorophylls remained in the CA (3% CO©ü+1 % O©ü) condition. The peel of fruit contained carotenoids of 13.9 §¶/g (f.wt.) in samples at harvest. Total carotenoids increased to the 260% of the initial value after 2 months at 20¡É, however no pronounced changes were observed after cold and CA storage for 2 and 4 months, respectively. The 13 carotenoid pigments were found in the peel of ¢¥Fuji¢¥ apple fruits. Its major carotenoid pigments were: ¥â-carotene (22.1%), lutein (33.4%), zeaxanthin (14.9%), violaxanthin (9.0%), neoxanthin (14.5%). Other pigments like antheraxanthin, isolutein, luteoxanthin and neochrome were also present as minor pigments.
